Precious Moment

Precious Moment was one of my favorite till today.  Walking through the precious moment figurine makes me touch and it always make me staring at them for hours, like creating a story line for them in my mind.  The peaceful, love, caring, sharing, prayers are all molded in Samuel J Butcher’s artwork.

Whenever I was in precious moment art shop, I wouldn’t get a chance to purchase the figurine, because they are so expensive!  Fortunately, I do have a precious moment mug that was given by MingFen on my birthday! A very thoughtful gift… And today, I have molded them on my fondant! The endearing teardrop-eye children that called “Precious Moment”

Ruby Wedding Celebration

This was a celebration preparation for my friend -Lesley parents.

It all started with just Ruby cakes request for her parents as she was staying in Shanghai. After some discussion, Lesley and her siblings decided to make it a bigger celebration with all her parent’s relatives and friends gathering. The place was chosen to be at Feringgi Grill, Golden Sand Hotel where the Ruby couples will renew their vows on sun set.

With all the hard work from dehappygifts, the dessert table and long dining table was well setup with sound system at the garden. Unfortunately, the weather do not allow the even to start off and all the decoration has to be done under the shades. The event was started off a little technical issues, but all the participant enjoy this gathering. In fact, it was a lovely and enjoyable evening.

Chocolate Chips Cookies

Chocolate chips cookies

Ingredients:

Make about 20 cookies

80g Butter (Room Temp)
30g Sugar    (1/8 cup)
30g brown Sugar    (1/8 cup)
1 Egg
1/2 Tbspn Rum
Chocolate Chips and nuts as prefer
170g All purpose Flour  (1  1/2 cup)

1. Preheat oven to 380F (~190C)
2. Beat together sugar with the butter until light yellow and fluffy
3. Beat in the egg, then gradually blend in the all purpose flour
4. Mix well with rum
5. Add in desire chocolate chips or nuts
6. Roll dough into small balls and lined on cookies pan
7. Press dough flat on pan and bake for 15 mins (20 mins for more crispy)

Marble Pound Cake

Ingredients:

A = Batter

150g Butter (Room Temp)

30g Sugar    (1/8 cup)

3 Egg Yolks

150g Cake Flour  (1  1/3 cup)

1 tspn Baking Powder

1 Tbspn Milk

B = Foam Egg Whites

3 Egg Whites

1 tspn Lemon juice

60g Sugar (1/4 cup)

C = Marble Effect

** 15g Cocoa Powder (1/8 cup)

Preheat oven to 320F (~160C)

Steps for A = Batter

1.  Beat together sugar with the butter until light yellow and fluffy

2.  Beat in the egg yolk, then gradually blend in cake flour + baking powder

3.  Alternate blending in milk on batter

Steps for B = Foam Egg Whites

4.  Whisk egg whites till bubble

5.  Drop in lemon juice

6.  Continue whisk till white foam shown and pour in rough estimation of 1/8 sugar

7.  Continue whisk at high speed and add in the remaining 1/8 sugar to foam peak

A+B = Plain Batter

8.  Scope a portion of Step A batter and mix well with Step B

9.  Pour Step 8 into the remaining Step A and mix well.

To make chocolate batter or marble effect

10. Separate some batter from Step 9 and fold in cocoa powder

11. Alternating spoonfuls of plain batter and chocolate batter to simulate a checkerboard in cake pan

12. To create marbling, run a table knife (or wooden skewer) through the batters in a swirling motion

13. Bake for 20-25 mins or toothpick comes out clean

Cranberry Banana Wheat Sponge Cake

Preparation:
Set oven bake temperature at 160C (or ~320F)

Ingredients:

Step A
5 Egg yolk
10 gm. Castor sugar (2 Tbspn)
3 Tbspn Olive Oil/vegetable oil
1/4 tspn Lemon juice
160 gm. Squash Banana (about 1.5 US banana)
60 gm. All purpose flour (1/2 cup)
30 gm. Wheat flour (1/4 cup)
1 tspn Milk

(1) Use a big bowl to mix egg yolk, sugar, olive oil, lemon juice, squash banana
(2) Add in all purpose flour and wheat flour to mix well
(3) Add in milk and continue mix and set aside

Step B
5 egg white Cold
50 gm.sugar (~1/4 cup)
1 tspn Lemon Juice

(4) Whisk egg white till bubble then add in lemon juice
(5) When egg white foam, add in half sugar (~estimation=50gm, don’t have to be accurate)
(6) Continue Whisk and add in the remaining balance of 50gm sugar till soft peak
** Make sure all mixer/bowl are dry without water/oil. Pure egg white with no single drop of egg yolk **

Step C
(7) Fold in some egg white foam to Step A (big Bowl of banana batter)
(8) Pour in mixture of step 7 back to the remaining egg white foam and mix well
(9) Use a small amount of all purpose flour to coat a handful of cranberries and fold in batter
** This is optional, all purpose flour coating will prevent cranberries sink to the bottom of the cake **
(10) Pour batter in sponge cake mold
(11) Bake for 55 mins
** Always check with a clean toothpick on your well done cake **
(12) Immediately flip and turn the mold with cake and allow cake to cool
(13) use a sharp knife to remove cake from mold

Layer Cheese Cake (Lapis Legit Keju)

Layer Cake

Preparation:
Set oven to Broil = Grill at 200C (or ~400F)
** Layer Cake is using grill method, not Bake! **
Grease and lined a 7″ square tray and set aside

Ingredients:

Step A
100 gm. Cake flour    (0.8 cup)
380 gm. Butter
120 gm. cream cheese
100 gm. castor sugar (0.4 cup)
16  egg yolk
2 tbsp. rum or brandy

(1) Cream butter, cream cheese and 100 gm. sugar till creamy.
(2) Add in egg yolks one by one making sure that it’s thoroughly combined before adding in the next egg yolk.
(3) Add in cake flour then complete with 2 Tbsp. rum and mix thoroughly.

Step B
3 egg white Cold
100 gm.sugar (0.4 cup)
1 tspn Lemon Juice

(4) Whisk egg white till bubble then add in Lemon Juice
(5) When egg white foam, add in half sugar (~estimation=50gm, don’t have to be accurate)
(6) Continue Whisk and add in the balance of 50gm sugar till soft peak
** Make sure all mixer/bowl are dry without water/oil. Pure egg white with no single drop of egg yolk **

Step C
(7) Fold in some egg white foam to Step A
(8) Pour in mixture of step 7 back to the remaining egg white foam and mix well
(9) Scope in a thin layer of batter on square tray and grill each layer at 7 mins

** Place your tray at very top rack and heat oven at TOP ONLY **

** I use a 3″ ladle to pour batter on square tray, use the ladle lightly press on the bottom layer when filled in each layer of batter**

** WARNING: Each oven temperature varies; Watch each layer of your cake to make sure not over burnt**

(10) Last layer bake for 10 mins or until brown on top
(11) Remove from oven, leave to cool on wire rack.
(12) Slice and serve.

Smurf

Smurf

I remember when I was a kid, I love to watch smurf. The cute little blue creature live in a small cute mushroom town.  Each smurf has a unique personality such as Papa smurf, Baby smurf, Grouchy, Handy, Jokey and many more.  See more at Meet Us Smurf.

The smurf movie is again in the theater and I could not wait to bring my girl for the show.

I received this order from Joanne’s art teacher.  I wasn’t sure if I’m able to make her special request but as I always mentioned, I love new challenges to built my portfolio.  Now I can feel the Smurf hit the town again!
