All Purpose Flour Dinner Roll

I had this dinner roll during  my last trip to Massachusetts when visiting one of our friend.

She made this dinner roll without bread flour and I find it interesting and I like to try it out and share this.

The bread turn out to be soft and not too heavy compared with bread flour.  I alter her recipe to 1 cup of wheat flour for my hubby’s health.  I also have some left over ham which I cut them in cube and roll them up for rising!

To make the bread like a flower shape, I set the dough in a rouded bunt pan.  keeping the dough 1-2cm away from each dough and lined them up side by side.  When the dough rise, it will became a nice flower ring, then you can just bake them!

This recipe is good for bread machine too!

HOmemade Bread


Make 12 rolls

1 cup milk

1/4 cup butter, room temperature

1 egg, slightly beaten

1/4 cup sugar

1 tspn salt (optional if salted butter used)

4 cups all purpose flour

*I alter with 3 cups all purpose flour with 1 cup wheat flour

2 tspn instant yeast

1. Warm milk at about 30C and let the yeast resolve in warm milk for 1-2 minutes.
* you could use microwave to warm the milk and use your finger to make sure the milk is not hot.

2. Mix all ingredient and knead until the dough is soft and smooth, not sticky to the touch.

3. Set the dough to rise to double the size and remember to cover the dough with damp cloth.

4. Punch down dough to release air.
* this will take about 45 mins to an hour depends on the weather at your area.

5. divide dough in small rolls and let it rise

6. Egg brush your roll and bake at 160C for 15-18 mins
* I use egg white only.

Cranberry Scone

Part A:

Shifted Plain Flour 200g

Baking Powder 2 tspn (6g)

Unsalted Butter 50g,

Salt 2g (If salted butter was used, Do Not add salt)

Sugar 30g

Part B:

1 egg

Plain yogurt 80g ( or 70g Milk)


1.  2 tpsn Cranberry

2.  2 tspn raisin

3.  2 tspn chocolate chips


1. Used food processor to blend in Part A ingredient.

Note: butter need to be cold.   If no food processor, mix well with hand mixer.

2. Add in all the fluid in Part B and mix well.  Do not over beat. Use about 30 sec to mix all ingredient by hand.

3. Add in optional flavor such as cranberry/raisin/chocolate chips if any.

4. Wrap the batter with clear wrap and store in refrigerator for at least 30 minutes.

To enjoy your scone:

5. Preheat oven to 200 C

6. Sprinkler some flour on batter.  Do a triple fold for 3 times and role the batter flat at about 3 cm height.

7. Use a circle cookie cutter to cut out the batter and line on pan.

Note: If no cookie cutter, you may role the batter in silicon shape and cut at 3 cm thickness

8. Bake for 10  minutes or until golden brown.




A = 120g Unsalted Butter + 80g Fine Sugar

B = 2Tbspn Cofee Powder + 2Tbspn Hot Milk

C = A + B + 1 egg yolk + 240g Plain Flour + 100g Walnut

Freeze and Bake:

1.  Roll and shape double-wrap dough in plastic wrap to prevent freezer burn and absorption of odors from your freezer.

Tips: cookie dough will keep in the freezer for up to 3 or 4 weeks.

2.  When you are ready to bake, simply let the dough defrost in the refrigerator.

3.  Preheat oven to 150C

4.  Cut the dough in 0.5cm thick and lined on baking pan. 

5.  Bake for 16-18 mins

Precious Moment

Precious Moment was one of my favorite till today.  Walking through the precious moment figurine makes me touch and it always make me staring at them for hours, like creating a story line for them in my mind.  The peaceful, love, caring, sharing, prayers are all molded in Samuel J Butcher’s artwork.

Whenever I was in precious moment art shop, I wouldn’t get a chance to purchase the figurine, because they are so expensive!  Fortunately, I do have a precious moment mug that was given by MingFen on my birthday! A very thoughtful gift… And today, I have molded them on my fondant! The endearing teardrop-eye children that called “Precious Moment”

After almost a year of break, tweethomemade has come on board again in receiving cupcakes request.  It was another big challenge where “noti” cupcakes was requested for Lisa’s Hen Night!  I love my creation in this cupcake where it does not reflect that much of  “noti” yet is was well presented the beauty of  “L.O.V.E”

Ruby Wedding Celebration

This was a celebration preparation for my friend -Lesley parents.

It all started with just Ruby cakes request for her parents as she was staying in Shanghai. After some discussion, Lesley and her siblings decided to make it a bigger celebration with all her parent’s relatives and friends gathering. The place was chosen to be at Feringgi Grill, Golden Sand Hotel where the Ruby couples will renew their vows on sun set.

With all the hard work from dehappygifts, the dessert table and long dining table was well setup with sound system at the garden. Unfortunately, the weather do not allow the even to start off and all the decoration has to be done under the shades. The event was started off a little technical issues, but all the participant enjoy this gathering. In fact, it was a lovely and enjoyable evening.

Coconut and Egg Jam = Kaya


1 Cup Coconut Milk

2 Cups Brown Sugar

8 Eggs

Mix egg, coconut milk, sugar and stir continuously over direct low heat or a double boiler until a jam-like thickness is formed.

** I use 3 hours **
