Christmas always make you feel warm, exciting and lazy.  Most probably it falls on the year end and in conjunction with the New Year celebration that will make me feel lazy to work and in holiday mood!

My hubby like to tell everyone that the purpose of Christmas!  That is to celebrate the birth of Jesus and it is nothing to do with present exchange, Christmas shopping and party with alcohol!  And he is still repeating the story every year… =)

This Christmas I cooked Turkey!  My very first Turkey is not juicy enough as I overcooked and it is very dry.  The left over was turn into ” Chinese Salty Vegetable Sour Soup” the next day and it taste good!

My Friend – Lisa, she ordered 2 gift boxes – 4 cupcakes for her family as Christmas Gift and she was very satisfy with her special order.  She had her message printed on the box and I made all her cupcakes with different 3D  fondant decoration.  Thanks Lisa for giving me this opportunity to show off my talent!

The Twin Pack – 2 cupcakes, I made that for gift exchange with my colleagues.  We had a wonderful dinner at Chicago Ribs and a couple pint of Hoegaarden at 40% off from 3pm-7pm weekdays.

All About Flour

All Purpose Flour (Plain Flour) 低筋面粉

The name from it will definitely tell you that you can use it for all purpose.

I would say all purpose flour is close to “plain flour” .  you can use it for almost any baking purposes.

In the market, you can find bleached and unbleached label.

Bleached flour has less protein and is suitable for making crust or cookies.

Unbleached flour are naturally bleached where is good for making pastry, pudding, cream, cake.

Whole -wheat Flour (Whole-meal Flour) 全麥面粉

It contains higher fiber and more nutrient as it has whole kernel wheat that mixed with plain flour.

Due to the presence of wheat germs, it is advice to store wheat flour tightly sealed and preferable refrigerator.

High Protein Flour(Bread Flour) 高筋面粉

High Protein means high gluten content in flour.  This flour is suitable for making yeast bread.

Self-Rising Flour 自发面粉

Self Rising Flour is plain flour with salt and baking powder content.  Normally will be suitable for muffin, cakes or biscuits.

Making bread is my weekly routine now.  Below are my sharing for this.


100g Tang Zhong (water raox)

250g bread flour (high protein flour)

60g wheat flour

30g fine sugar

1 egg

¾ tspn instant yeast

80g cold milk

30g butter

Some plain flour for kneading


Tangzhong starter / Water roux

A Tangzhong starter / Water roux starter is a mixture of flour and water.

Ratio of bread flour : water (1:5)

Why Water roux?
Heating up the mixture of bread flour(high protein flour) with fluid will bring out the gelatin of starch in flour to absorbed more water in bread making.

Why using starch gelatin?

Soften Bread

Bread elastic

Prolong freshness
